Yogurt with Blueberries and Walnuts
(Serves 2) WF, SF
This is one you can prep before bed and enjoy as a quick meal in the morning. Just cover in the fridge overnight. In the morning, rinse the berries and add to the bowl with the nuts. Adapted from the Raw on $10 a Day blog.
Ingredients
- 1 cup cashews (soak 1-2 hours for smoother yogurt, if desired)
- 2 large ripe bananas
- 2-3 tbsp lemon juice (1 lemon)
- 1 pinch salt
- 1/2 cup water, as needed for blending
- 1 cup washed fresh blueberries
- A few chopped walnuts
Directions
- In a blender, puree the bananas, water, cashews, salt, and lemon juice until smooth.
- Pour evenly into two bowls or containers, cover, and refrigerate overnight.
- Top each bowl with half the blueberries and walnuts, then serve.
